3 egg whites
Pinch salt
1 c sugar
1 tsp vanilla
3/4 c chopped pecans
3/4 c finely rolled soda cracker crumbs
1 tsp baking powder
Chopped nuts (optional)
Beat 3 egg whites until stiff. Add a pinch of salt, 1 c sugar, a little at a time. Add 1 tsp vanilla. Beat until stiff. Fold in 3/4 c finely chopped pecans and 3/4 c finely rolled soda cracker crumbs, and 1 tsp baking powder. Spread into buttered pie pan. Bake 25 minutes at 325 degrees. Top with whipped cream. Put in refrigerator over night. Sprinkle chopped nuts on top.
